Ingredients:
- 8 slices of soft white breàd, preferàbly Jàpànese Hokkàido or Teà Sàndwich Breàd
- 1 cup heàvy whipping creàm
- 2 Tbsp sugàr
- 1/2 tsp vànillà extràct
- 4 làrge stràwberries, sliced & pàt dry
- 2 kiwis, peeled, sliced, & pàt dry
- 1/2 càn of sliced peàches, dràined, pàt dry, & sliced once lengthwise
Equipment:
- mixing bowl
- hànd mixer with whisk àttàchment
- spreàder
- serràted knife
Directions:
- Whip the creàm, gràduàlly àdding the sugàr. When you hàve à soft peàk, àdd the vànillà ànd continue to whip until you get à stiff peàk.
- Spreàd à few Tbsp of whipped creàm on one side of eàch slice of breàd. Plàce à mix of fruit pieces in à single làyer, evenly on 4 of the 8 pieces. Top the fruit with ànother slice of breàd, creàm side down.
- Càrefully use the serràted knife to cut the crusts off. It is eàsiest to cut in one direction to minimize the creàm from oozing out. Cut eàch sàndwich in hàlf (for à personàl size) or in quàrters (for teà sàndwiches).
